Now that Thanksgiving is over and we’re all resuming our regularly scheduled eating habits, I thought I’d share my Easy Peasy Turmeric Lentil Soup Recipe! Not only is this soup hearty and delicious, but thanks to the turmeric, garlic, and cumin, it’s anti-inflammatory and full of antioxidants.
Best part? It’s so easy to whip up. Read below for the recipe!
For this soup, I usually get all of the ingredients from Trader Joes and I buy organic whenever possible. I suggest getting the mirepoix to save time from having to chop celery, carrots, and onions.
- 2 tbs olive oil
- 1 cup chopped celery
- 1 cup chopped carrots
- 10 green onions, chopped
- 1 cup chopped yellow onions
- 10 cloves garlic, finely chopped (use less if desired)
- 1 1/3 cup green lentils, rinsed
- 1/2 lemon squeezed
- 1 cup fresh parsley, chopped
- 2 qt vegetable stock
- 1 tsp turmeric
- 1 tbs cumin
- salt and pepper
Prep Time: 20 mins | Total time: 40 mins
01 | Prep the veggies
Chop the veggies, garlic, and parsley. Squeeze the lemon juice into a small bowl, removing seeds. Rinse the lentils and let them drain in the sink.
02 | Start the soup
Pour 2 tbs of olive oil into a 4-qt pot and heat on medium. Add in garlic and sauté a bit before adding the celery, carrots, yellow onion and green onion. Stir occasionally and cook until yellow onions are translucent (about 5 minutes).
03 | Add the rest in
Next, add the lentils, turmeric, cumin, lemon juice, and vegetable stock. Do not add parsley yet. Once soup is gently boiling, add in parsley, reduce heat and let it simmer until lentils and carrots are soft (about 20 minutes). Salt and pepper to taste.
04 | Serve hot
Pour into bowls and serve hot with warm Naan (flatbread).
05 | Share with a neighbor
This recipe makes about two quarts of soup so you’ll have plenty left over to share. I like to pour it into a one-quart mason jar, write a little note, and surprise a friend or neighbor. Giving someone a homemade meal is such a loving and thoughtful way to spread holiday cheer.
